At the heart and soul of Firebrick Bread is our oven – a massive feat of engineering and construction. Several thousand pounds of concrete and firebrick provide the mass that is needed to store the heat for baking.

A fire is built directly inside the baking chamber. This fire is fed until the 8 inches of surrounding firebrick and concrete are saturated to about 600 degrees. Once the temperature is optimal for baking, the ashes and coals are raked and swept out of the baking chamber. A slightly damp mopping ensures there is no residue left before the fully proofed loaves are loaded into the oven.
